Sweet and Sour Raw Mango Rice

Ingredients
  • Raw mango (sliced) – 1 cup (from 1 medium sized mango)
  • Jeera rice/ Basmati rice – 1 cup
  • Coconut (grated) – ½ cup
  • Ghee – 2 tbsp
  • Vegetable oil – 4 tbsp (2+2)
  • Onion – ½
  • Salt – as needed
  • Water – 2 cups
  • Red chilli (whole) – 3-4
  • Green chilli – 2
  • Peanuts – 3 tbsp (2+1)
  • Sesame seeds – 1 tsp
  • Grated jaggery – 2 tbsp
  • Curry leaves – 1 sprig
  • Mustard seeds – 1 tsp
  • Asafoetida – ¼ tsp
  • Turmeric powder – ¼ tsp
Instructions
  1. First prepare the rice. Wash the rice and allow to drain water.
  2. Keep 2 cups of water for boiling.
  3. In another pan heat ghee and 2 tbsp oil. Add sliced onions and saute until they turn light brown.
  4. Now add the drained rice and saute for 5 minutes.
  5. Then add the boiling water to this rice and add salt as required.
  6. Mix well and cook covered until fully done. (Depending on the rice used, you may have to add extra quarter to half cup of water)
  7. Turn off the flame and allow to cool.
  8. Now in a grinder mix together the cut mangoes, coconut, 2 red chillis, green chillis, salt,2 tbsp peanuts, jaggery and seasame seeds. Grind to a coarse paste.
  9. In a pan, heat 2 tbsp oil and splutter mustard seeds.
  10. Add 1 tbsp peanuts, curry leaves , 1-2 red chillis, turmeric and asafoetida. Mix well.
  11. Now add the raw mango paste and saute for about 5 minutes.
  12. Turn the flame off and allow to cool.
  13. Mix the raw mango paste with the rice thoroughly.
  14. Enjoy your raw mango rice with mango pickle, curd and pappad.
